It is called <em data-start=\"316\" data-end=\"325\">Fenggao<\/em>, meaning <strong data-start=\"335\" data-end=\"356\">\u201choneycomb cake,\u201d<\/strong> because the inside of the cake contains numerous small holes resembling a honeycomb when it is broken apart.<\/p>\n<h3 data-section-id=\"gbjzdm\" data-start=\"467\" data-end=\"492\">Red and White Fenggao<\/h3>\n<p data-start=\"494\" data-end=\"562\"><strong data-start=\"494\" data-end=\"509\">Red Fenggao<\/strong> and <strong data-start=\"514\" data-end=\"531\">White Fenggao<\/strong> are two traditional varieties.<\/p>\n<p data-start=\"564\" data-end=\"1044\">To make White Fenggao, wheat flour is fermented into a thick batter and then mixed thoroughly with an appropriate amount of alkaline ingredient. The batter is topped with ingredients such as <strong data-start=\"755\" data-end=\"815\">Chinese dates, osmanthus flowers, pine nuts, and raisins<\/strong>. It is then steamed in a steamer, with the toppings arranged on the surface. A thin layer of oil is brushed over the top, and several small holes may be made in the batter with chopsticks to allow steam to escape during cooking.<\/p>\n<p data-start=\"1046\" data-end=\"1276\">Red Fenggao is traditionally made with <strong data-start=\"1085\" data-end=\"1125\">standard wheat flour and brown sugar<\/strong>, while White Fenggao is made with <strong data-start=\"1160\" data-end=\"1202\">high-grade wheat flour and white sugar<\/strong>. Both varieties have a sweet, fragrant flavor and a soft, fluffy texture.<\/p>\n<h3 data-section-id=\"108o71x\" data-start=\"1278\" data-end=\"1301\">Bowl-Shaped Fenggao<\/h3>\n<p data-start=\"1303\" data-end=\"1648\"><strong data-start=\"1303\" data-end=\"1325\">Bowl Fenggao (\u7897\u8702\u7cd5)<\/strong> is another traditional variety. It is made by fermenting high-grade wheat flour, then mixing it with an alkaline ingredient and white sugar. Small bowls are greased with oil, and the fermented dough is placed inside. Five Chinese dates are traditionally arranged on top of each portion before it is steamed over high heat.<\/p>\n<p data-start=\"1650\" data-end=\"1796\">After steaming, the cake takes on a distinctive <strong data-start=\"1698\" data-end=\"1712\">bowl shape<\/strong>, often with a cracked or \u201cblossoming\u201d surface. It is soft, fluffy, and easy to eat.<\/p>\n<h3 data-section-id=\"5eczfe\" data-start=\"1798\" data-end=\"1820\">Rice Flour Fenggao<\/h3>\n<p data-start=\"1822\" data-end=\"1955\"><strong data-start=\"1822\" data-end=\"1851\">Rice Flour Fenggao (\u7c73\u9762\u8702\u7cd5)<\/strong> is similar to Bowl Fenggao, but its main ingredient is <strong data-start=\"1907\" data-end=\"1954\">japonica rice flour rather than wheat flour<\/strong>.<\/p>\n<p data-start=\"1957\" data-end=\"2266\">To prepare it, japonica rice is washed and soaked in cold water for approximately <strong data-start=\"2039\" data-end=\"2061\">four to five hours<\/strong>. After draining, the rice is ground into fine flour and sifted. Traditional fermented starter is mixed with warm water and then combined with the rice flour. The mixture is covered and allowed to ferment.<\/p>\n<p data-start=\"2268\" data-end=\"2462\">After fermentation, an appropriate amount of alkaline ingredient is added to balance the acidity. White sugar and osmanthus are then incorporated, and the mixture is stirred into a thick batter.<\/p>\n<p data-start=\"2464\" data-end=\"2743\">The batter is poured into small, oil-greased bowls and steamed over high heat. Once cooked, the cakes are removed from the bowls and decorated with <strong data-start=\"2612\" data-end=\"2682\">candied green plum, melon seeds, and diced hawthorn cake (Jinggao)<\/strong>. The toppings may also be arranged into decorative patterns.<\/p>\n<p data-start=\"2745\" data-end=\"2988\">Rice Flour Fenggao has a <strong data-start=\"2770\" data-end=\"2791\">milky-white color<\/strong>, complemented by colorful red and green toppings. It is soft, airy, sweet, and fragrant. Its characteristic honeycomb-like interior is the reason it is also known as <strong data-start=\"2958\" data-end=\"2987\">Rice Flour Honeycomb Cake<\/strong>.<\/p>\n<h3 data-section-id=\"1r6qhbg\" data-start=\"2990\" data-end=\"3021\">A Traditional Beijing Snack<\/h3>\n<p data-start=\"3023\" data-end=\"3262\">Fenggao is a representative example of traditional <strong data-start=\"3074\" data-end=\"3108\">Beijing-style steamed pastries<\/strong>.
